Putting a camera on an RC car changes what the hobby is. From the driver's position everything looks slower and further away; from the car's bumper, a kerb is a cliff and a gravel path is a rally stage. It is also how you get footage worth keeping, rather than a distant shape moving across a field.
Two different things
Onboard recording uses an action camera - a GoPro or similar - mounted to the car, recording to its own memory card. You watch it afterwards. Simple, high quality, and nothing to set up beyond a mount.
FPV means first person view: a camera and video transmitter on the car sending a live picture to a screen or goggles, so you drive from inside the car rather than watching it. Far more immersive, and a genuinely different skill - you lose all sense of where the car is in the wider space.
What you need for FPV
A camera, a video transmitter, and a receiver with either a screen or FPV goggles. Power usually comes from the car's own pack, which shortens run times. Mount everything with some vibration damping or the picture will be unwatchable on rough ground.
What to watch out for
Weight and its position matter more than people expect - a camera on the roof raises the centre of gravity and will make a car roll more easily in corners. Vibration ruins footage, so soft mounts are worth the money. And a camera drawing from the drive battery will cut your run time noticeably, so plan for a spare pack. See LiPo batteries.

Rock crawlers are the natural fit - slow, stable, and the terrain looks spectacular from bumper height. Monster trucks give you the jumps. Fast on-road cars are the hardest to film well, because vibration and speed work against you.
